Regal Smoked Salmon with Smashed Avo Toast

Ingredients

  • 2 slices Regal Manuka Smoked Salmon
  • 1 slice sourdough, toasted
  • 1 egg
  • 1/2 avocado
  • capers
  • fresh dill, finely chopped
  • lemon
  • chilli oil, drizzle

Pickled Red Onions:
  • 1 red onion, finely sliced
  • 1 lemon, juice
  • 1/2 cup white wine vinegar
  • salt, to taste

Method

To start, add all of the pickled red onion ingredients into a bowl and give it a good stir. Leave it for about 15 minutes, then drain. Toast the sourdough bread.

Smash the avocado in a small bowl then spread over the sourdough. Place the smoked salmon over the avocado, then the pickled onion and season with capers, dill, chilli oil and enjoy!
