Regal Maple Smoked Salmon, Fennel, Watercress and Orange Salad

Ingredients
- 200g of Regal Maple Cold Smoked Salmon Slices
- 1 fennel bulb, thinly sliced
- 1 green apple
- 2 cups of watercress
- 3 tablespoons pomegranate, seeds
- 1 small bunch of fresh dill, torn
- 1/2 cucumber, cut into thin strips
- 1 avocado
Dressing:
- 3 tablespoons of orange juice
- 2 tablespoons of olive oil
- 1 tablespoon of apple cider vinegar
- 1 garlic, clove minced
- 1/4 teaspoon of cracked pepper
- 1 pinch of salt
Method
Place all dressing ingredients in a small jar or container with a lid. Shake until well combined and emulsified.
In a large bowl, toss together all salad ingredients. Pour over half the dressing and place on a serving plate. Top with remaining dressing or serve alongside.
