Regal Wood Roasted Salmon Soft Tacos
- 2 x 150g packs of Regal Wood Roasted Salmon
- 8 mini tortillas
- smoked paprika
- 2 avocados, sliced, to serve
- 1 cup Lewis Road Creamery Sour Cream
- 4 tbsp lemon juice
- 1 whole jalapeño, diced
- 3 tbps coriander, chopped
Preheat oven to 200° C. To make the cream, combine sour cream, lime juice, jalapeño, coriander and salt in a bowl.
Place Regal salmon in oven proof dish and cover with foil and place in oven for 10 minutes. Warm tortillas according to package directions. Place salmon in a warmed tortilla and top with jalapeño cream. Serve with avocados and dust Jalapeño cream with smoked paprika.
