Japanese Style Regal Salmon with Noodles and Stir Fry Vegetables
Ingredients
- 250g Regal Salmon Fillets
- 1/4 cup teriyaki sauce
- 1 teaspoon sesame oil or olive oil, for frying
- 1 tablespoon sesame seeds
- 2 medium carrots, cut into thin strips
- 1 leek, thinly sliced
- 200g green beans, cut into thin strips
- 1/2 cup cold water
- 2 tablespoons mirin
- 1 tablespoon rice vinegar
- 2 tablespoons soy sauce
- 500g bag baby spinach leaves
- 250g packet soba noodles
Method
Marinate the salmon fillets in the teriyaki sauce, sesame oil and sesame seeds for about 30 minutes.
Heat a frying pan with a little olive oil or preheat the grill to its hottest. Cook the salmon for about 3 minutes each side. Remove and set aside.
Wilt the spinach in the same frying pan. Set aside.
Heat a wok and add the extra sesame oil, then the carrot, leeks, and beans. Add water, mirin, rice wine vinegar and soy sauce. Stir and cook for about 2-minutes.
Cook the noodles according to packet instructions, toss in a little sesame oil and extra teriyaki sauce and the wilted spinach. Roughly mix together the noodles and spinach. Divide between two plates.
Top noodles with Regal Salmon Fresh-Cut Loins. Serve with a nest of the stir-fried vegetables and dress with extra teriyaki sauce.
