Smoked Salmon with Soba Noodles, Asparagus, Sesame & Toasted Nori
Ingredients
- 200g Regal Cold Smoked Salmon
- 200g soba noodles
- 1 tsp sesame oil
- 1 Lebanese cucumber, julienned, or thinly sliced
- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 2 spring onion, finely sliced
- coriander leaves or , handful
- 1 small red chili, thinly sliced, optional
- 1 sheet nori, toasted, finely shredded or crumbled
- sesame seeds, toasted, to garnish

Sesame-Ginger Dressing:
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 Tbsp sesame oil
- 1 tsp honey or maple syrup
- 1 tsp freshly grated ginger
- 1 small garlic clove, finely grated
- 1 tsp lime juice
- 1 tsp tahini paste, optional
- 1-2 tsp water, optional, to loosen if needed
Method
- Cook soba noodles according to packet instructions (4–5 minutes). Drain, rinse under cold water, and toss lightly with sesame oil to prevent sticking.
- Blanch asparagus in salted boiling water for 1–2 minutes until bright green and just tender. Transfer to ice water, then drain well.
- Whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, lime juice, and tahini until smooth.
- In a large bowl, combine soba noodles, cucumber, asparagus, and spring onions. Add dressing and toss gently until evenly coated.
- Divide noodles between bowls.
- Fold Regal King smoked salmon into ribbons and arrange on top.
- Finish with toasted nori, sesame seeds, herbs, and chilli if using.
- Add salmon roe if desired.
