BBQ Regal Salmon w Maple Mustard Glaze
Ingredients
- 6 Regal King Salmon portions
- 1/3 cup Al Brown’s Old Yella Mustard
- 2 Tbsp maple syrup
- 2 tsp ground cumin
- flaky sea salt
- black pepper
- cooking oil
Garnish:
- pomegranate seeds
- pickled red onion
- coriander leaves
Method
- Pre-heat the BBQ on high with a flat grill plate, or pre-heat the oven to 200°C.
- In a small bowl, mix the Old Yella Mustard with the maple syrup and ground cumin.
- Using a pastry brush, brush the glaze over the salmon portions and season with salt and black pepper.
- Lightly oil the BBQ grill plate, place the salmon portions on top and close the lid. Alternatively, place the salmon on a lightly oiled baking tray and cook in the pre-heated oven. Cook for 8-10 minutes depending on the portion size.
- Garnish with the pomegranate seeds, pickled red onion and fresh coriander leaves.
