Smoked Salmon Poke
Ingredients
- 1 cup white rice, cooked
- 1/4 cup sesame oil
- 3 Tbsp tamari sauce
- 2 Tbsp honey
- 2 tsp rice vinegar
- 1 Tbsp lime juice
- 1 tsp lime zest
- 1 avocado, thinly sliced
- 100g Regal Cold Smoked Salmon
- 1/2 cup green cabbage, shredded
- 1 small bunch broccolini, steamed
- 1 cucumber, sliced
- 1/2 red onion, sliced
- 1 Tbsp sesame seeds, toasted
- wasabi peas, to serve
- pickled ginger, to serve
Method
- Cook rice according to manufacturer’s instructions (we use a rice cooker).
- Meanwhile, prepare the dressing. Combine sesame oil, tamari, honey, rice vinegar, lime juice and zest in a small mixing bowl. Whisk to combine. Set aside.
- Spoon the cooked rice into the centre of two bowls.
- Arrange the avocado, Smoked Salmon, cabbage, broccolini, cucumber and onion around the rice.
- Toast sesame seeds in a pan, and sprinkle over your bowl once cooled.
- Drizzle your dressing, adding wasabi peas and picked ginger to your taste.
- Serve and enjoy.
