Smoked Salmon Bruschetta with Pickled Cucumber & Radishes

Ingredients

Quick pickled cucumber & radishes:
  • 4 radishes, thinly sliced
  • 1/2 cucumber, thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/2 cup water
  • 4 tablespoons caster sugar
  • 1 teaspoon salt
  • 1 clove garlic, sliced
  • 1 teaspoon mustard seeds, optional

To assemble:
  • 2 x 100g packs of Regal Smoked Salmon
  • 200g sour cream
  • 2 tablespoons horseradish, grated
  • 1 lemon, rind finely grated
  • 1 tablespoon chives, finely chopped
  • 1 tablespoon fresh dill, finely chopped, plus extra to serve
  • 8 slices of sourdough or ciabatta
  • 1/2 small red onion, thinly sliced
  • 2 tablespoons capers
  • sea salt
  • cracked pepper
  • Radish microgreens, (optional)

Method

Quick pickled cucumber & radishes:

Place the thinly sliced radishes and cucumber in a jar, tightly packed.

Place the apple cider vinegar, water, caster sugar, salt, garlic slices and mustard seeds in a saucepan. Bring to the boil then simmer until sugar has fully dissolved. Pour the mixture over the vegetables and cool completely before serving.

To assemble:

In a small bowl, mix together the sour cream, horseradish, lemon rind, chives and dill.

Toast the slices of bread and smear a generous spoonful of sour cream mixture on each. Top with red onion, pickled radishes and cucumber, capers and smoked salmon. Season with salt and pepper and garnish with radish micro greens and dill.
