Regal Salmon Dip on Prawn Crackers
Ingredients
- 1 Tub Regal King Salmon Dip, Classic
- 1/3 cup cream
- 1/2 lemon, juice
- 1/3 cup coriander leaves, finely chopped
- 40 x prawn crackers
- canola oil, oil for frying
- sprinkle of ground cumin
- sprinkle of smoked paprika
- flaky sea salt
Method
- Place the dip in a mixing bowl, stir in the cream, lemon juice, and freshly chopped coriander. Refrigerate until required.
- Add the canola oil to the deep fryer and heat to 180°C. If you don’t have a deep fryer, add oil to a heavy-duty skillet or saucepan to shallow fry.
- Add the crackers to the hot oil in small batches. Once they expand, cook for another minute, moving them through the oil as you go. Remove and drain on a paper towel, then repeat until all crackers are cooked.
- Sprinkle the crackers with equal parts ground cumin and smoked paprika. Season with sea salt.
- To serve, use a piping bag or spoon to add the dip to each cracker. Eat now!
