Ingredients

  • 1 Tub Regal King Salmon Dip, Classic
  • 1/3 cup cream
  • 1/2 lemon, juice
  • 1/3 cup coriander leaves, finely chopped
  • 40 x prawn crackers
  • canola oil, oil for frying
  • sprinkle of ground cumin
  • sprinkle of smoked paprika
  • flaky sea salt

Method

  1. Place the dip in a mixing bowl, stir in the cream, lemon juice, and freshly chopped coriander. Refrigerate until required.
  2. Add the canola oil to the deep fryer and heat to 180°C. If you don’t have a deep fryer, add oil to a heavy-duty skillet or saucepan to shallow fry.
  3. Add the crackers to the hot oil in small batches. Once they expand, cook for another minute, moving them through the oil as you go. Remove and drain on a paper towel, then repeat until all crackers are cooked.
  4. Sprinkle the crackers with equal parts ground cumin and smoked paprika. Season with sea salt.
  5. To serve, use a piping bag or spoon to add the dip to each cracker. Eat now!
