Regal Salmon Dip w Apple & Avo Salsa Verde
Ingredients
- 1 Tub Regal King Salmon Dip, Classic
- 1/4 Granny Smith apple, finely diced
- 1/4 green capsicum, finely diced
- 1/4 avocado, finely diced
- 1 Tbsp gherkins, finely diced
- 1 Tbsp capers, finely diced
- 1 Tbsp red onion, finely diced
- 1/4 cup fresh dill, finely chopped
- 1/4 cup basil leaves, finely chopped
- 1/2 lemon, zest and juice
- 1/2 tsp sugar
- 1/4 - 1/3 cup olive oil or Al’s Lemon & Fennel Olive Oil
- flaky sea salt
- black pepper
- crostini or crackers, to serve
Method
- In a medium bowl, mix together all ingredients except the salt, pepper and salmon dip.
- Once combined, season to taste with sea salt and black pepper. Add extra lemon juice to boost the flavour.
- To plate, place the dip in the centre of a platter and make a small well in the centre using the back of a spoon.
- Spoon over the salsa verde and serve with crostini or crackers.
