Ingredients

  • 1 Tub Regal King Salmon Dip, Classic
  • 1/4 Granny Smith apple, finely diced
  • 1/4 green capsicum, finely diced
  • 1/4 avocado, finely diced
  • 1 Tbsp gherkins, finely diced
  • 1 Tbsp capers, finely diced
  • 1 Tbsp red onion, finely diced
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup basil leaves, finely chopped
  • 1/2 lemon, zest and juice
  • 1/2 tsp sugar
  • 1/4 - 1/3 cup olive oil or Al’s Lemon & Fennel Olive Oil
  • flaky sea salt
  • black pepper
  • crostini or crackers, to serve

Method

  1. In a medium bowl, mix together all ingredients except the salt, pepper and salmon dip.
  2. Once combined, season to taste with sea salt and black pepper. Add extra lemon juice to boost the flavour.
  3. To plate, place the dip in the centre of a platter and make a small well in the centre using the back of a spoon.
  4. Spoon over the salsa verde and serve with crostini or crackers.
