Regal Spiffy Nachos
Ingredients
- 1 bag tortilla chips
- 1 tub Regal King Salmon Dip, Classic
- 1-2 red capsicum, roasted, peeled and cut into strips
- 3-4 Tbsp pickled jalapeño, rougly chopped
- 1-2 cups cheese, grated
- handful coriander leaves, roughly chopped
- 2-3 limes or lemon
- 1 pack Regal Salmon Hot Smoked, optional
Method
- Preheat the oven to 180°C. Spread the corn chips onto an ovenproof dish.
- Using a teaspoon, spoon lumps of the Regal Salmon Dip over the corn chips. Top with strips of capsicum, pickled jalapenos and hot smoked salmon. Lastly, sprinkle with a liberal amount of grated cheese.
- Place in the preheated oven for about 10 minutes until the cheese has thoroughly melted.
- Garnish with chopped coriander, then serve with lime wedges on the side for squeezing. Serve now!
