Regal Panko & Sesame Salmon Bites
- 400g Regal King Fresh Fillets, skin removed
- 2 large eggs, whisked
- 1/2 cup of plain flour
- 1/2 teaspoon of smoked paprika
- 1/2 teaspoon of salt
- 1/2 teaspoon of cracked pepper
- 2 cups of panko crumbs
- 1 tablespoon of sesame seeds
- Rice bran oil for frying
Chilli & Garlic Sour Cream:
- 1 cup of sour cream
- 2 tablespoons of sweet chilli sauce
- 2 teaspoons of sriracha, optional
- 1 clove of garlic, finely grated
- To serve , Lemon wedges
Cut the Regal King salmon fillets into cubes roughly 3cm in length.
Set yourself up with three bowls. Place whisked egg in the first, the flour, smoked paprika, salt and pepper in the second, and the panko crumbs and sesame seeds in the third. Line a baking tray with baking paper.
Dip the salmon cubes into the flour, dust off any excess then dip into the whisked egg, followed by the panko crumbs. Make sure the salmon bites are completely coated, then place on the lined tray. Repeat with remaining bites.
Shallow fry the salmon bites in batches over a medium heat, once golden, turn and fry the other side. Place on a plate lined with paper towels to drain off any oil.
In a bowl, mix together all of the sauce ingredients.
Serve warm salmon panko bites alongside sauce and lemon wedges.
