Ingredients

  • 6 Regal King Salmon portions
  • 1 1/2 cups panko crumbs
  • 3 Tbsp cream of horseradish, store bought or homemade*
  • 1 1/2 Tbsp mint jelly
  • 50g butter, melted
  • 1/4 cup fresh mint, finely chopped
  • 1/4 cup basil leaves, finely chopped
  • 1/4 cup fresh dill, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 lemon, juice and zest
  • flaky sea salt
  • black pepper, freshly ground
  • cooking oil
  • lemon wedges, to serve

Method

  1. Pre-heat the BBQ on high with a flat grill plate, or pre-heat the oven to 200°C.
  2. In a medium-sized bowl, add the breadcumbs, cream of horseradish*, mint jelly, melted butter, fresh herbs, lemon juice and zest. Using clean hands, mix until evenly combined.
  3. Season the salmon portions with sea salt and black pepper, then top generously with the herb crumble.
  4. Lightly oil the BBQ grill plate, place the salmon portions on top and close the lid. Alternatively, place the salmon on a lightly oiled baking tray and cook in the preheated oven. Cook for 8-10 minutes depending on portion size.
  5. Serve with fresh lemon wedges.
