Regal Salmon with Horseradish & Herb Crumble
Ingredients
- 6 Regal King Salmon portions
- 1 1/2 cups panko crumbs
- 3 Tbsp cream of horseradish, store bought or homemade*
- 1 1/2 Tbsp mint jelly
- 50g butter, melted
- 1/4 cup fresh mint, finely chopped
- 1/4 cup basil leaves, finely chopped
- 1/4 cup fresh dill, finely chopped
- 1/4 cup fresh parsley, finely chopped
- 1 lemon, juice and zest
- flaky sea salt
- black pepper, freshly ground
- cooking oil
- lemon wedges, to serve
Method
- Pre-heat the BBQ on high with a flat grill plate, or pre-heat the oven to 200°C.
- In a medium-sized bowl, add the breadcumbs, cream of horseradish*, mint jelly, melted butter, fresh herbs, lemon juice and zest. Using clean hands, mix until evenly combined.
- Season the salmon portions with sea salt and black pepper, then top generously with the herb crumble.
- Lightly oil the BBQ grill plate, place the salmon portions on top and close the lid. Alternatively, place the salmon on a lightly oiled baking tray and cook in the preheated oven. Cook for 8-10 minutes depending on portion size.
- Serve with fresh lemon wedges.
