Ingredients

  • 100g of Regal Manuka Smoked Salmon, Slices
  • 400 gram packet crusty pie pastry
  • 4 eggs
  • 1 cup milk
  • 3 tablespoons fresh parsley, chopped
  • fresh dill
  • chives
  • salt
  • cracked pepper

Method

  1. Roll pastry out to 2mm thickness and use to line a 20cm quiche dish.
  2. Trim edges by rolling rolling pin over the edge of the dish.
  3. Bake blind at 190 degrees C for 10 minutes.
  4. Remove baking blind material and return pastry to oven for 2 minutes to dry out.
  5. Lightly beat eggs and milk together until combined.
  6. Mix in herbs, salt and pepper.
  7. Pour into prepared pastry shell.
  8. Cut salmon into 1cm strips and arrange over the egg mixture.
  9. Bake at 180 degrees C for 40 minutes or until quiche is set.
  10. Serve with a green salad.
