Easter Recipe! Savoury Salmon Brunch Waffles

Ingredients

Waffles:
  • 2 cups of all-purpose flour
  • 1 tablespoon of caster sugar
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 3/4 cups of buttermilk
  • 60g of butter, melted
  • 2 eggs, large

Waffle toppings:
  • 200g of Regal Maple Hot Smoked Salmon
  • Poached eggs
  • fresh herbs
  • parmesan cheese
  • avocado, sliced or mashed
  • red onion

Cherry tomato salsa:
  • 1 punnet of cherry tomatoes
  • 1/4 of a red onion
  • olive oil

Method

Make the waffles:

Sift flour, sugar, baking powder, baking soda and salt into a large mixing bowl. In a separate bowl whisk together buttermilk, melted butter, and eggs. Add the wet ingredients into the large mixing bowl. Mix together until smooth.

Heat waffle iron and grease with butter. Cook waffles until golden. Makes 8 waffles.

While the waffles are cooking prepare the toppings.

Cherry tomato salsa:

Slice 1 punnet of cherry tomatoes into quarters. Thinly slice 1/4 of a small red onion. Toss tomatoes and red onion with olive oil, salt and pepper.

Serve waffles straight away and top with your favourite brunch toppings.
